Missouri Peach Cobbler                                                               Serves 8

8-10 cups sliced peaches, 1 cup sugar, 3-4 tablespoons flour or 1/4 cup dry tapioca, 1/2 teaspoon nutmeg, 2 teaspoons lemon juice,  1 1/2 teaspoons vanilla, 1/6 cup butter or margarine, pastry for double crust pie, ice cream

Combine peaches, sugar, flour (tapioca)  & nutmeg in large pot; set aside about 10 minutes.  Bring peach mixture to a boil; reduce heat to low, simmer 10 minutes or until peaches are tender.  Remove from heat and stir in vanilla, lemon juice and margarine.

Spray 2 quart baking dish with Pam, or rub with margarine.  Spoon 1/2 peach mixture into dish.  Top with 1 pastry. Bake at 475 degrees for 12 minutes or until lightly browned.  Spoon remaining peach mixture over baked pastry.

 Cut remaining pastry into 1 inch strips; arrange in lattice design over peaches.  Bake an additional 15-20 minutes until browned.  Allow to cool slightly before serving.  Serve with vanilla ice cream.
