8-10 cups sliced peaches, 1 cup sugar
Combine peaches, sugar, flour (tapioca)
& nutmeg in large pot; set aside about 10 minutes.
Bring peach mixture to a boil; reduce heat to low, simmer 10
minutes or until peaches are tender.
Remove from heat and stir in vanilla, lemon juice and margarine.
Spray 2 quart
baking dish with Pam, or rub with margarine.
Spoon 1/2 peach mixture into dish.
Top with 1 pastry. Bake at 475 degrees for 12 minutes or until
lightly browned. Spoon
remaining peach mixture over baked pastry.
