Preheat oven to 375 degrees
2 cups cake flour
3/4 cup sugar
1 egg
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1/4 cup shortening
3/4 cup milk
1 cup blueberries
Topping
1/2 cup sugar, 1/3 cup flour, 1/2 tsp. cinnamon, 1/4 cup margarine or butter
In a large bowl, beat egg, than add sugar. Add shortening and milk. Combine flour, baking powder and salt. Add and stir until moist. Fold in blueberries. Grease and flour a 11 x 7.5 inch pan. Combine ingredients for topping and put over cake mixture. Bake for 40-50 minutes. Be sure it is done the middle by testing with a toothpick.
Note: This recipe makes delicious blueberry muffins. Pour batter into muffin papers until 1/2 full, sprinkle with topping and bake for 20-25 minutes.
