Peach Butter (*updated 2007)
8 cups mashed peaches
3 cups sugar
3 tablespoons lemon juice
Cook over medium-high heat. Foam will form, Stir foam down. Keep an eye on the mixture and turn down the heat a little if necessary. Start stirring constantly when it boils, and continue for about 10 minutes. Place in hot, prepared canning jars and seal. Contributed by Steve Ruby
